Gluten-free swiss roll

Bake this gluten-free swiss roll to your taste using different fillings! This soft cake base is easy and fast to bake.

Ingredients
 4 eggs
 1 ½ dl sugar
 2 tsp baking powder
Filling
 300 g to 400g jam
 2 dl whipped cream
 200 g vanilla quark (or cream cheese)
Directions

Whisk the eggs and sugar into a foam. Mix together the dry ingredients and add in. Don't over mix! Scrape on to a deep baking tray lined with baking paper and even out. Bake in 225-degrees for approx. 7 minutes.

Let the cake base cool before spreading the jam on top. Whip up the cream and add the quark. Spread a thin layer on top of the jam. Roll the cake base to fairly tight roll. Take the baking paper of just before it touches the filling. This way the base is easier to move and won't break. Let it sit in its baking paper wrapper. If you're not serving swiss roll right away you can store it in the fridge like this!

Take the wrapper out before serving and sprinkle sugar on top or decorate as you like.
