Gluten-free spinach nettle crepes make a delicious dinner or lunch! Fill with our mushroom & spinach filling or choose a filling of choice!

Gluten-free spinach nettle crepes

Ingredients
Crepes
 2 ¾ dl milk
 1 egg
 1 tsp salt
 60 g to 70g of spinach
Filling
 200 g sour cream
 200 g cottage cheese
 1 small red onion
 salt
 thyme
 rosemary
 black pepper
Fried mushrooms
 200 g to 400g mushrooms
 60 g to 80g spinach
 the same spices
Directions

With a blender mix milk, eggs and spinach into a fine green mixture. Add in flours and salt and blend smooth. Let it rest for 10 minutes. Cook using oil. Remember to mix the dough before every crepe.

Chop the onion finely. Mix sour cream, cottage cheese, spices and onion. Taste and add spices to your flavor. Chop the mushrooms and fry with oil. When the mushrooms are almost done add the spinach to the skillet. Use the same spices as previously.

Add cottage cheese & sour cream filling and fried mushrooms inside the crepe. Enjoy!
