Gluten-free spicy banana muffins (teff flour)

Tasty and moist banana muffins using only gluten-free whole grain teff flour! This recipe makes approx. 25 muffins.

Ingredients
 150 g margarine
 5 ½ dl sugar
 1 dl brown sugar
 3 eggs
 2 tsp baking powder
 1 tsp baking soda
 4 tsp gingerbread spice mix
 2 tsp vanilla sugar
 3 ripe bananas
Directions

Smash the bananas. Melt margarine and mix well with the sugars. Add eggs. Mix the dry ingredients together and add in the dough in turns with the banana smash. Mix only so that the dough is even!

Spoon the dough into muffin cups and bake in 175 degrees for approx. 20 minutes. The muffins will become dark due to the bananas and teff flour!

Let them cool and store in an airtight container.
