These delicious gluten-free cookies are made with Virtasalmen Viljatuote’s gluten-free oat flour mix. The recipe makes approx. 30 big cookies or 50 small cookies

Whisk soft butter and sugar for few minutes. Add the eggs.
Mix the dry ingredients and add them to the dough.
Roll the dough into a log and divide in 30 or more pieces. Make small balls and flatten them onto parchment paper on a baking tray. Keep enough space between the cookies.
Press few lingonberries into the cookies.
Bake at 200°C for about 12 to 17 minutes (depending on the size of the cookies) or until they are golden brown.
Let them cool and keep them in a jar with lid.
