Gluten-free Mirabelle plum pie

This gluten-free Mirabelle plum pie is a very traditional summer pie in France. These plums are golden, sweet and full of flavours!!

Ingredients
Pastry dough
 1 egg yolk
 60 g butter
 60 g sugar
 1 pinch salt
Almond cream
 120 g almond powder
 2 eggs
 80 g sugar
Garnish
 30 Mirabelle plums
Directions
Pastry dough

Mix soft butter and sugar together until you get a nice cream. Add the egg yolk, the salt and the flour. Knead well until you get a smooth ball. (Do not over work the dough).
Let the dough rest in a cool place for 1 hour

Press the pastry dough onto a 24 cm de diameter pie dish.

Almond cream

In a large bowl, mix almond powder, 2 eggs and sugar together. Pour the cream onto the pastry dough.

Garnish

Clean and stone the Mirabelle plums. Place them onto the cream.

Bake in the oven at 180°C for about 35 minutes until golden.
