Gluten-free Kinder cupcakes

Gluten-free Kinder cupcakes are a double chocolate dream come true! Chocolate muffins topped of with a white chocolate frosting, is there any better? If you want to leave the frosting out just add more white chocolate into the dough.

Gluten-free Kinder cupcakes

Ingredients
Muffins
 150 g margarine
 2 dl sugar
 2 eggs
 ½ dl cold water
 3 tbsp cocoa powder
 2 tsp vanilla sugar
 2 tsp baking powder
 50 g white chocolate (and milk chocolate)
Frosting
 200 g cream cheese
 100 g margarine
 2 tsp vanilla extract
 150 g white chocolate
 6 dl powder sugar
Directions

Mix the room-temperature margarine and sugar well. Add eggs and water. In a separate bowl mix dry ingredients and add to the dough. Mix and lastly toss in chocolate in pieces. Divide into muffin cups (approx. 9 large). Bake in 200-degrees for 15 minutes.

Mix the cold margarine with about 2 dl of powder sugar (in a mixer or hand mixer). Add creme cheese, melted white chocolate and vanilla extract. Mix smooth. Add powder sugar a few dl at a time. Scrape into a piping bag and frost the cooled down muffins. Sprinkle crushed Kinder surprise on top or milk and white chocolate.

Store in the fridge and let the cupcake warm-up in room-temperature before eating!
