Gluten-free healthy banana bread is a soft and delicious snack! With no white sugar or butter, there's no need to feel bad after having a slice - or five!

Ingredients
 5 tbsp coconut oil
 6 tbsp honey (approx. 1 dl)
 2 eggs
 3 dl riped bananas (approx. 3)
 ½ dl milk of choice
 1 tsp baking soda
 1 tsp vanilla extract
 ½ tsp salt
 1 tsp cinnamon
 80 g dark chocolate (atleast 70%)
Directions

Set oven to 180-degrees. Melt the coconut oil in the microwave. Mix coconut oil, honey, and eggs together. Add milk, spices, mashed bananas, chocolate, and mix. Add the flours and fold/mix gently. Don't over mix!

Pour in a loaf pan and sprinkle chocolate chunks and cinnamon on top (optional). Bake for 60 minutes. Cover with a foil after 30 minutes or when the top looks golden. If you don't, the bread will come too dark. Let it cool for a few minutes before transferring out of the pan. Freeze fresh or store in an air-tight container for few days.
