Gluten-free Finnish blueberry pie

Delicious gluten-free Finnish blueberry pie is a traditional dessert from Eastern Finland. With our Dark Flour Mix you won't even taste the difference to traditional rye crust!

Gluten-free Finnish blueberry pie

Ingredients
Crust
 125 g butter
 75 g sugar
 100 g sour cream
 1 ½ tsp baking powder
Filling
 8 dl blueberries (approx. 500g)
 100 g sugar
 35 g potato flour
Directions

In a large bowl mix sour cream and psyllium. Let rest for 10m minutes. Whisk butter and sugar. Add dark flour mix, baking powder and cream. Mix all well. Roll about 2/3 of the dough on a baking paper and place the dough on a buttered pie dish.

Filling In a large bowl, mix blueberries, sugar and potato flour. Pour the blueberries into the pie dish. Roll the dough and place over the blueberries. Seal properly the side with the top of the pie. Bake in oven at 200°C for 25-30 minutes. Let it cool. Serve with vanilla cream or with vanilla ice cream.
