Gluten-free double chocolate cookies

These gluten-free double chocolate cookies are the perfect combo of sweet white chocolate and rich dark chocolate! Crispy on the outside and soft on the inside!

Gluten-free double chocolate cookies

Ingredients
 100 g soft margarine
 1 dl sugar
 1 dl brown sugar
 1 egg
 1 tsp vanilla extract
 1 ½ dl cocoa powder
 1 tsp baking soda
 1 ml salt
 1 tbsp milk
 150 g white chocolate chips (you can use more)
Directions

Mix sugars and margarine well. Add the egg and vanilla extract. Mix dry ingredients together and add to the dough with the milk. Add white chocolate chips and mix. Place in the fridge for at least 2 hours. You can also store it in the fridge overnight.

Transfer to room-temperature about 15 minutes before baking. Set oven to 180-degrees. With an ice cream scoop or by hands make small balls and place on a baking tray lined with baking paper. Bake in 180-degrees for 10-12 minutes. Optional: place a few white chocolate chips on top of the freshly baked cookies. Let them cool and store air-tight!
