Gluten-free cinnamon “S” biscuits

These gluten-free "S" shaped cinnamon biscuits are simply scrumptious! They are very traditional here in Finland and everybody just love them!

Gluten-free cinnamon "S" biscuits

Ingredients
 120 g butter/margarine
 180 g sugar
 3 eggs
 1 tsp ground cinnamon
 1 tsp vanilla sugar
 1 tsp baking powder
 ½ tsp xanthan gum
 200 g Virtasalmen Viljatuote’s gluten-free bun flour mix
 150 g Virtasalmen Viljatuote’s gluten-free fine rice flour
Directions

Whisk butter and sugar to obtain a nice foam.
Add the eggs one by one.
Mix all dry ingredients and add the mix to the dough whisking carefully.
Place the dough in a piping bag with a star tip. Pipe the biscuits in ”S” shape keeping space between each biscuits.
Bake at 200°C for about 10 minutes or until they are golden. If they are not crunchy enough, bake a bit longer to your own taste. Cooking time depends on oven efficiency and size of the biscuits.
