A delicious recipe for six gluten-free and vegan carrot cake donuts! Enjoy!

Gluten-free carrot cake donuts

Ingredients
Donuts
 ½ tsp baking powder
 ¼ tsp baking soda
 ¼ tsp salt
 1 tsp Ceylon cinnamon
 ½ tsp (or 1 tso) whole cane sugar and vanilla mix or Bourbon vanilla powder
 1 dl coconut sugar
 1 tbsp ground flaxseeds + 3 tbsp water (mix and soak)
 1 ripe mashed banana
 3 tbsp melted coconut oil
 ½ tbsp apple cider vinegar
 1 dl almond milk (approx., add small amount at a time)
Frosting
 100 g vegan cream cheese
 50 g margarine (vegan)
 1 ½ dl powdered sugar (1½-2dl)
 vanilla to taste
Directions

Preheat the oven to 200°C. Prepare donut tray by greasing with coconut oil. Mix dry ingredients and wet ingredients in separate bowls. Combine and make a smooth batter with using a hand blender. Place the donut batter into a piping bag and pipe it into the donut partitions. Bake for 10-12 min. Allow to cool completely before doing the topping.

Add the cream cheese to a bowl and start mixing. Add margarine and sugar (small amount at a time) and continue mixing on low speed.

Crushed hazelnuts for topping.
