Gluten-free blueberry pie

This delicious gluten-free blueberry pie is made with Virtasalmen Viljatuote’s gluten-free bun flour mix. It is so creamy that there is no need for ice cream with it.

Gluten-free blueberry pie

Ingredients
 200 g soft butter
 2 dl sugar
 2 eggs
 2 tsp baking powder
Filling
 5 dl blueberries
 250 g quark
 200 g sour cream
 4 eggs
 1 dl sugar
 2 tsp vanilla sugar
Directions

Whisk soft butter and sugar for few minutes.
Add the eggs one and one. Whisk well.
Mix the dry ingredients together and add them gently to the dough until smooth.
Line a large baking tray with parchment paper. Pour the batter on the baking tray and spread it evenly.
Sprinkle blueberries onto the batter.

Filling

Mix the quark, sour cream, eggs, sugar and vanilla sugar together. Pour onto the blueberries.
Bake in the oven at 200°C for about 30 minutes.
