These gluten-free biscuits are made with Virtasalmen Viljatuote's gluten-free broad bean flour mix. Broad beans are an excellent vegetable source of protein and fibre.

Whisk the eggs and sugar to obtain a nice foam.
Add the dry ingredients and the melted butter. Mix all well.
Let the dough to rest in the fridge for 2-3 hours.
Roll the dough into a thin layer and use a small cookie cutter to make the biscuits.
Brush the biscuits with egg wash and sprinkle sugar.
Bake at 200°C for 7-8 minutes
