These gluten-free berry tartlets are just perfect for summer! Just pick your favorite berry!

Gluten-free berry tartlets

Ingredients
 ½ dl sugar
 ¼ tsp salt
 100 g cold butter
 1 egg yolk
Filling 1
 2 dl double cream
 100 g white chocolate
 100 g cream cheese
 Blueberries or other berries
Filling 2
 200 g Alpro vanilla dessert
 Alpro vanilla dessert
Directions
Crust

Mix all the ingredients carefully with your fingers.
Put the dough in the fridge for a short while so it is easier to handle.
Butter the tartlet moulds and press the dough evenly at the bottom and on the side.
Put some dry beans so the dough won’t rise in the oven.
Bake at 200°C for 9 minutes in the mid-section of the oven.
The crust does not need to be brown.
Let cool down before removing the beans and before adding the filling.

Filling 1

Whisk the cold double cream to get a nice whipped cream.
Melt the white chocolate in a bain-marie or in the microwave oven on low power.
Swirl the cream cheese with a mixer and add the melted white chocolate.
Finally add the whipped cream carefully.
Pipe the filling onto the crust. You can also use a spoon to put the filling onto the crust.
Decorate with fresh berries and whipped cream if you wish.

Filling 2

Place some Alpro vanilla dessert on each tartlet’s crust.
Decorate with fresh berries and whipped cream if you wish.
