Easy and quick blueberry cake made with Virtasalmen Viljatuote’s gluten-free all-purpose flour mix. Enjoy with vanilla ice-cream or vanilla sauce!!

Easy gluten-free blueberry cake

Ingredients
 4 eggs
 3 dl sugar
 1 tbsp vanilla sugar
 3 tbsp baking powder
 200 g butter (or margarine)
 2 dl milk
 5 dl blueberries
Directions

Whisk eggs and sugar to get a nice foam.
Mix the dry ingredients together. Melt the butter.
Add to the foam the dry ingredients, the milk and the melted butter alternately.
Mix lightly into a smooth dough.
Mix half of the blueberry into the dough.

Butter a cake mould (about 23 x 33 cm) and pour the dough.
Sprinkle the remaining blueberries onto the top.
Bake in the middle of the oven at 200°C for about 30 minutes.
Serve the cake with vanilla sauce or vanilla ice cream.
