Gluten-free mud cake


200 g butter
200 g gluten-free dark chocolate
4 eggs
140 g brown sugar / white sugar
1 teaspoon vanilla sugar
140 g Virtasalmen Viljatuote’s gluten-free dark flour mix
1 teaspoon baking powder
½ teaspoon salt


Melt butter and chocolate on low heat and let cool.
Whisk eggs and sugar for few minutes.
Mix dry ingredients together and add them little by little to the egg-sugar mix. Mix gently.
Add melted chocolate to the dough.
Line a 24cm-diameter cake pan (with removable bottom) with parchment paper. Pour the dough into the pan.
Bake in the oven at 200°C for 15-20 minutes. The center of the cake should remain soft.
Let cool and serve with vanilla ice-cream
