Gluten-free lemon and chia seeds cake


190 g Virtasalmen Viljatuote’s gluten-free bun flour mix
150 g sugar
½ teaspoon baking powder
3 eggs
110 g quark
1 pinch of salt
65 g butter (melted)
One organic lemon zest
½ organic lemon juice
2-3 teaspoons chia seeds


Preheat the oven at 180°C.
Melt the butter and let it cool.
In a bowl, mix the bun flour mix, sugar and baking powder.
Add the pinch of salt and the eggs. Mix well.
Add the quark.
Zest the organic lemon and press one half of the lemon.
Add the melted butter to the batter. Then the zest and the juice.
Add the chia seeds and mix well.
Pour the batter in a rectangle loaf pan lined with parchment paper.
Bake in the oven for 1 hour.
Check that the cake is cooked by inserting a clean wooden skewer. If it comes out clean, it is ready.
Let the cake cool before taking out of the pan.
