Gluten-free Herb feta tart

Viljatuote nettle pancake flour mix is a versatile flour mix – perfect for pancakes, and also for savory tarts and pies. This herb feta tart is ready in 30 minutes and delicious as lunch or snack.


2 dl Virtasalmen Viljatuote’s Glutenfree Nettle pancake flour mix
80 g butter or vegan butter
50 g grated cheese or vegan cheese
¼ tsp salt
¼ tsp sugar
1 tbsp (or more if needed) water

100 g cream cheese or vegan cream cheese
1 tsp dijon mustard
½ tsp dried basil
½ tsp dried oregano
100 g tomatoes
100 g feta or vegan feta cheese
Black pepper

For serving: fresh herbs such as basil


Preheat oven to 200 C.

Mix the crust ingredients: flour, butter, cheese, sugar and salt in a bowl. Add 1 tbsp water and more 1 tsp at a time until the dough feels soft.

Roll the crust on a baking sheet covered with parchment paper. If the dough sticks to the rolling pin, add a splash of water on the crust and keep rolling until you have a thin base about half the size of the baking sheet.

Mix dijon and dried herbs to the cream cheese. Spread the herby cream cheese on the crust, add thinly sliced tomatoes, feta cubes and black pepper. Bake in the oven for 20 minutes and let chill before serving.

Serve with lots of fresh herbs such as basil.
