Gluten-free Blueberry Pie Snack Cookies

Protein and fiber rich broad bean flour mix works perfectly in sweet baking. These snack cookies are deliciously blueberry flavored – like blueberry pie, but in a convenient cookie form. Enjoy as a snack or as a healthyish dessert with coffee!


2 dl Virtasalmen Viljatuote’s Gluten-free Broad bean flour mix
1 dl Virtasalmen Viljatuote’s Gluten-free rolled oats 
0,5 dl sunflower seeds (or any seeds or chopped nuts)
0,75 dl coconut sugar (or any kind of sugar)
1 tsp ground cardamom
0,5 tsp salt
90 g (appr. 1 dl) oil (such as neutral flavored coconut oil)
0,75 dl soy yogurt
50 g (appr. 1 dl) frozen wild blueberries


Preheat oven to 200 C.

Mix dry ingredients: flour, oats, seeds, sugar and spices in a bowl. Add oil and mix well. At this point the batter is very coarse. Add yogurt and blueberries and mix until you have a soft batter which is easy to shape into cookies.

Shape into cookies and bake for 10 min. Let chill before eating.
